Dairy waste management to reduce environmental pollution through its utilization in various food and non-food products is a major concern of the dairy industry. Whey buttermilk are regarded as materials Therefore, current review aimed summarize extraction methods potential application cheese whey production different products, i.e., microencapsulation matrix, beverages, baked microorganisms’ cultivation, edible films, exopolysaccharides, organic acids, essential fatty acids. These wasted components can be extracted from by utilizing such conventional homogenization, ultra-high-pressure ultrafiltration, reverse osmosis, nanofiltration. In technology, these have been used encapsulate oils, probiotics several bioactive substances. buttermilk-based beverages also prepared accentuate their beverage microbial fermented significant role value-added production. Edible coatings protein concentrate more accessible, environmentally friendly, nontoxic, low cost. addition, substances peptides, acids buttermilk. Moreover, improve physicochemical, organoleptic, rheological properties (i.e. water absorption, gelatinization temperature, dough development time) goods bakery conclusion, proved beneficial introducing dairy-based healthy reduction economic growth country.
